Ingredients:
- 2 eggs
- 1/2 cup vegetable oil
- 3/4 cup brown sugar
- 1/2 cup all purpose flour
- 3/4 cup whole wheat flour
- 1 tsp baking soda
- dash of salt
- 1 cup halved frozen/fresh cranberry
- 1/2 cup chocolate chips
- Whisk the eggs in a large bowl.
- Gradually stir in the oil and sugar to the egg.
- In another large bowl, whisk together the all purpose flour, whole wheat flour, baking soda and salt.
- Preheat oven to 350 degrees F.
- With a spatula, fold the dry ingredients to the wet ingredients and stir only until all ingredients are combined. Do not over mix the batter as it will result in tough muffins.
- Stir in the cranberry and the chocolate chips.
- Evenly fill the muffin cups with the batter.
- Place the muffin cups in the oven and bake until a toothpick inserted in the center of a muffin comes out clean. (about 14-18 minutes).
- Transfer to a wire rack and let cool for about 5 minutes before removing from tray.
